hot rice fritters

2 cups cooked rice
3 eggs, well beaten
1/2 tsp. vanilla extract
1 tsp. granulated sugar
1/4 tsp. salt
6 Tb. all purpose flour
3 tsp. baking powder
fat for deep frying 
sifted confectioners' sugar

Combine rice, eggs, and vanilla and mix
thoroughly. Stir sugar, salt, flour, and
baking powder into rice mixture. Drop by spoonfuls
into hot deep fat...(360 F)
and fry until brown. Drain on absorbent paper. 
Sprinkle with confectioners' sugar. 
Serve very HOT.
