chicken salad

3 cold cooked chickens
9 eggs
1/2 lb butter or a 
teacup of olive oil
1 c. vinegar
4 tablespoons mustard
2 tablespoons sugar
1 teaspoon black pepper
2 or 3 bunches of celery
salt and pepper to taste

Chop up chicken add chopped celery and season with salt
and pepper to taste. Mix with dressing made from the other
ingredients as follows:

Beat up the eggs well, add the butter or olive oil, vinegar, and 
seasonings, but on a pot and cook, stirring all the time until 
it is almost as thick as mush. When cold, add and extra 1/2 cup of 
strong vinegar and pour over the chicken and celery. Mix well 
leaving out enough dressing to cover the top. 

Serves 20-30 people.
