cornbread dressing

2 c. chopped celery
2 c. chopped onion
2 tbsp. sage
1 tbsp. poultry seasoning
½ c. butter or margarine
2 eggs, beaten
8 c. crumbled cornbread
4 c. bread crumbs (crumbs, not cubes)
1 c. cooked, finely chopped giblets
2 qts. chicken broth (reserved from giblets)
salt, pepper, sugar to taste

1. Melt butter in a heavy skillet. Add celery and onion. 
Saute 5 minutes or until onions are clear. 
2. Combine crumbled cornbread,
bread crumbs, and giblets
 in a large mixing bowl.
Stir in broth, 
add celery, onions, sage,
poultry seasoning. Season 
with salt, pepper, and 
sugar if desired. Add eggs.
Mix well.
3. Pour into a large baking dish, 
sprinkle with paprika. 
Cover and bake at 400 degrees 
for 35-40 minutes. 
Remove cover during last 
15 minutes of cook time to brown top.
