cornbread salad

2 (8 ounce) packages dry corn bread mix 
1 red onion, chopped 
1 green bell pepper, chopped 
1 tomato, chopped 
1 cup grated cheddar cheese
4 cups mayonnaise 

Prepare cornbread according to the box instructions.
Cool, crumble and place in a large bowl. 
Mix in red onion, bell pepper, tomato, cheese, 
and mayonnaise. Cover, and refrigerate for 2-3 hours.
