potato salad (1)

2 pounds new potatoes
3 Tbs tarragon vinegar or white wine vinegar
1/2 tsp kosher salt
2 tsp Dijon mustard
6 Tbs good quality olive oil
1 Tbs minced chives
1 Tbs minced tarragon
1 Tbs minced flat-leaf parsley
Freshly ground black pepper to taste

Cook potatoes and slice into 1/4 inch slices. 

Whisk together the vinegar, salt, and mustard, then add the olive oil
in a thin drizzle, whisking constantly. Pour over warm potatoes in a 
large bowl and toss. Just before serving add herbs and freshly ground
pepper.
