ham salad

2 cups of country ham, ground
3 eggs, boiled and chopped
1 cup celery, finely chopped
1/2 cup pickle relish
1/2 cup mayonnaise

Mix all ingredients together and refrigerate. 
Serve on bread or with crackers.
Great way to use the scrappy pieces 
of a ham! I also like to add yellow onions
and green onions
