peanut soup (1)

2 Tb. minced onion
3 Tb. butter
1 Tb. flour
1 cup peanut butter
4 cups chicken broth
salt and pepper to taste
1 cup whipping cream
1 Tb. Madeira wine

Cook union in butter until soft in 2-quart saucepan.
Add the flour and cook, stirring, until smooth.
Stir in the peanut butter; add the chicken broth.
Season to taste with salt and pepper.
Cook, stirring over low heat until thickened and smooth.
Add cream. Just before serving, add Madeira
