potato salad (2)

5 lb. red potatoes with skins on
2 c. mayonnaise(more or less depending on how 
you like it)
1 lg. onion, finely diced
2 stalks celery, finely diced 
3 carrots, grated or finely diced
1 green pepper, finely diced
6 hard boiled, finely chopped eggs
15 finely chopped green olives
1/4 c. yellow mustard
2 T. cider vinegar
1 T. sugar
1/2 tsp. salt
1 tsp. black pepper

Peel potatoes and boil until just done. 
Dice or slice potatoes, mix other ingredients 
and add to potatoes while still warm. Serve chilled. © 2001-2007
